Taleggio: i numeri relativi all’ultimo anno, pubblicati dal Consorzio, segnalano un aumento della produzione e delle vendite.
Formaggio tutelato dall’Unione Europea, a partire dal 1996 (Regolamento CE 1107/96)), come prodotto Dop – Denominazione di origine protetta, il Taleggio ha come zona di produzione la Lombardia (province di Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milano, Pavia), il Piemonte (la sola provincia di Novara) e il Veneto (la sola provincia di Treviso).
Quanto Taleggio viene prodotto e quanto ne viene venduto? I dati pubblicati dal Consorzio nel febbraio del 2022 (dati relativi all’anno 2021) segnalano una produzione che nel 2021 ha raggiunto quota 4 milioni e 340mila forme di formaggio prodotte, per un totale di 86.800 quintali, e con una crescita importante rispetto al 2020, quando la produzione si era fermata a 4 milioni e 200mila forme e 83.700 quintali prodotti.
Per quanto riguarda le vendite, il fatturato 2021 è stato di 97 milioni e 730mila euro (erano stati 94 milioni e 820mila euro nel 2020), e il giro d’affari alla produzione è stato di 48 milioni e 865mila euro, in netta crescita rispetto ai 46 milioni e 865mila euro del 2020. Si tratta naturalmente di numeri relativamente di nicchia rispetto a quelli di formaggi come il Parmigiano Reggiano (che nel 2021 ha raggiunto fatturati di 2,7 miliardi di euro e un giro d’affari alla produzione di 1,71 miliardi), ma il Taleggio Dop si conferma un prodotto di qualità molto apprezzato dai consumatori, con numeri in crescita e con un export che nel 2021 è aumentato di due punti percentuali rispetto al 2020 (ha raggiunto nel 2021 quota 22.573 quintali esportati, con numeri vicini a quelli pre-pandemici del 2019, quando i quintali esportati erano stati 23.127), un export che copre oggi il 26% del totale della produzione, con esportazioni dedicate per il 64% ai mercati europei e per il 36% ai mercati extra-Ue.
