Formaggi senza lattosio: il mercato è in crescita in Italia, le vendite annue superano i 57 milioni di euro e si registrano numeri importanti soprattutto nel caso delle mozzarelle.
I dati pubblicati ad agosto 2019 da Assolatte, la più importante associazione italiana del settore lattiero-caseario, segnalano un quadro positivo per il comparto dei formaggi senza lattosio, adatti per chi ha problemi e intolleranze alimentari: nell’ultimo anno le vendite a volume in Italia hanno toccato quota 5,7 milioni di kg, per un totale di oltre 57 milioni di euro.
Tra i formaggi senza lattosio il più venduto è nettamente la mozzarella delatossata, che da sola rappresenta circa un terzo delle vendite dell’intero comparto, e che in dodici mesi (tra giugno 2018 e maggio 2019) è cresciuta (nelle vendite sul mercato interno italiano) del 5,2% in valore e del 7,2% a volume. Ma in crescita sono anche i formaggi spalmabili senza lattosio, che rappresentano la tipologia più venduta dopo le mozzarelle e che tra giugno 2018 e maggio 2019 hanno registrato un +3,2% a valore e un +4,1% a volume.
Secondo Assolatte “il successo dei formaggi delattosati si deve a un mix di fattori. Il primo è la capacità delle aziende casearie di proporre prodotti caseari delattosati buoni e digeribili, che ripropongono il sapore, la consistenza e il piacere dei formaggi a cui gli italiani sono abituati e a cui non vogliono rinunciare. Niente sacrifici, dunque, per chi vuole eliminare il lattosio ma senza rinunciare ai formaggi, anche perché l’assortimento che si trova nei banchi frigo della distribuzione moderna è ampio, dalla mozzarella al mascarpone, dal primo sale alla crescenza, dalla ricotta ai formaggi spalmabili“.
